宫保虾丁Prawn Mantis Kungpo

【材料】
A:冷冻虾仁1包、粟粉1杯、粟米油500-750毫升
B:辣椒干8条(剪成3寸长)、姜3寸(切片)、大葱1粒(切块)
、青灯笼椒1⁄2 粒(切丁)、青葱2束(切3寸长) 、粟粉1茶匙
(+ 清水2汤匙)
【酱汁材料】
麻油1⁄2 茶匙、鸡精粉1⁄2 茶匙、黑酱油1⁄2 茶匙、酱青1⁄2 茶匙、蚝油2
汤匙、糖1茶匙、酸梅酱2汤匙、黑醋1茶匙
【做法】
1. 将大葱、青灯笼椒切块;姜切片备用。(图1)
2. 把虾仁解冻并以1粒鸡蛋、少许盐腌好,收入冰箱内30分钟待
用。(图2-3)
3. 锅内热Mazola粟米油,将沾上粟粉的虾仁放入热油中,以中火
炸20秒或至香脆,捞起沥干油备用。(图4-5)
4. 锅内留2汤匙粟米油,爆炒辣椒干约20秒至香,捞起备
用。(图6)
5. 再用同样的油爆香姜片后,加入大葱炒约5秒,注入酱汁材料和
辣椒干捞匀。(图7-8)
6. 加入虾仁和青灯笼椒兜匀,以少许粟粉水勾芡。(图9-10)
7. 熄火,撒上少许青葱段,即可趁热配白饭享用。

【Ingredients】
A:1 packet frozen prawn mantis (defrosted and marinated with
1 beaten egg & some salt), 1 cup tapioca flour for dusting,
500-750 ml  Corn Oil
B:8 stalks dried chillies(cut into 3cm lengths), 3 cm ginger (sliced),
1 big onion(wedged), 1⁄2 green capsicum (cut cubes), 2 sprigs
spring onion(cut into 3cm lengths), 1 tsp corn flour (mix with 2
tbsp water)
【Sauce Ingredients】combine all
1⁄2 tsp sesame oil, 1 tsp chicken stock granules, 1 tsp dark soya
sauce, 1 tsp light soya sauce, 2 tbsps oyster sauce, 1 tsp sugar or
to taste, 2 tbsps plum sauce, 1 tsp black vinegar
【Method】
1. Cut onion and capsicum in wedges; slices ginger and set aside.

2. Marinate defrosted prawn mantis with marinade ingredients for
30 minutes in the refrigerator.(pic 2-3)
3. Dust or roll the prawn mantis in the tapioca flour, deep fry in
Corn Oil with medium heat until crispy, removing once
its crunchy, drain on paper towels. (pic 4-5)
4. Remove oil leaving 2 tbsps in the wok, stir fry dried chillies till
fragrant about 20 seconds. Remove & set aside. (pic 6)
5. Using the balance Mazola Corn Oil, sauté ginger till fragrant
over high heat. Add in onions & dried chillies, stir for 5 seconds
before adding sauce ingredients.(pic 7-8)
6. Add in crispy prawn mantis and capsicum, thicken with corn
flour solution.(pic 9-10)
7. Turn off heat, garnish with spring onions on top. Serve with
white rice.
